- Whole Grain Bread
- Ripe Avacado
- Tajin Seasoning
- Cotija Cheese
- Grape Tomatoes, cut in halves
- Green Tabasco (optional)
Heat Blackstone to low heat and put bread on to start toasting.
Add small amount of butter or oil to cook eggs in if desired.
Crack one egg per toast and add salt and pepper to eggs.
Cut avocado in half and slice thinly. Spread across toast & season with salt, pepper, and Tajin seasoning.
Add grape tomato halves.
Add over easy egg on top of the avocado.
Sprinkle with Cotija cheese and extra Tajin seasoning. If desired, top with green Tabasco sauce.
