- 1 unit of Can Pineapple slices (or one fresh pineapple, sliced and cored)
- 1/2 cup of Brown Sugar
- 1 tbsp of Lemon juice
- 2 tbsp of Honey
- 3 tbsp of Rum (or 1½ tsp Rum extract)
- 4 tbsp of Butter
- Vanilla Ice Cream
Preheat Blackstone griddle to low heat.
In a large bowl combine brown sugar, lemon juice, rum, and honey in a bowl until smooth. Add pineapple rings to the bowl and spread mixture on both sides of each pineapple ring.
Melt the butter on the griddle.
Place pineapple rings on the griddle for 3-5 minutes, turning once until sugar mixture melts and pineapple is heated and tender.
Pour the remaining sugar mixture over pineapple rings and let it reduce. Keep the heat low and the sauce moving to avoiding burning the sugar.
Turn the griddle off and remove pineapple slices from the heat and serve with scoop of ice cream and drizzle the sauce over the top.
