Preheat Blackstone griddle to medium heat. Apply thin layer of canola oil to the griddle top.
Steps 3-5 can be cooked at the same time.
Add pulled pork to the griddle top, season to taste with Bootleg Burger seasoning. Cook pork for 6-10 minutes or until edges are crispy.
Crack all 12 eggs directly on the griddle top. Season to taste with salt. Cook to desired doneness.
Add hash browns to the griddle top, season to taste with salt. Cook until both sides are crispy.
Once the hash browns are done, add shredded cheddar and stir with spatulas until melted.
Warm 12 flour tortillas on griddle until soft and lightly toasted.
Build the quesadillas. Evenly divide the hash browns, eggs, and pulled pork between the 12 tortillas. Serve with hickory barbecue sauce.
